AALIA‘s esteemed chef dinner series continues into 2023 announcing the first chef in a highly anticipated lineup of guest appearances; Ben Williamson, celebrated chef and co-owner of the Brisbane-based, woodfired restaurant Agnes.
AALIA’s Executive Chef, Paul Farag, is opening up his kitchen to a selection of talented chefs giving Sydney diners the chance to try their bespoke dishes for one-night-only. Guests can expect a culmination of Middle Eastern and North African cuisines, and unique culinary techniques that work together to create a standout menu.
On Monday the 27th of February, Paul and Ben will team up to bring to life a collaborative, creative menu that showcases cooking over fire, combining their love for ancient traditions and spices that are elevated to new heights in a modern way for diners.
On the menu, guests can expect Ben’s signature dishes such as his harissa quail, as well as Paul’s Khorasan pita and Eggplant mes ‘a’ aha, alongside a selection of delicious Middle Eastern dishes ($110pp).

The AALIA chef series continues throughout 2023, with Melbourne Turkish restaurant, Tulum’s Coskun Uysal offering a $110pp collab menu on the 20th of March. AALIA continues to explore their focus on Middle Eastern coastlines, with this Turkish collaboration. Tulum has been named the “Best Turkish Restaurant” by Melbourne’s leading food critics and has been recognised for its delicious dishes. Uysal is a true ambassador of Turkish cuisine and all profits for this event will be donated to Ahbap – a platform raising funds and awareness for a devastating earthquake that has recently hit Turkey.
Later this year, AALIA will continue to welcome esteemed chefs from both Australia and overseas, to the Sydney kitchen.
